I want a prize from the UK but my taste buds are too boring! The yummiest potato topping is pulled pork, but it's too many calories. Otherwise, I'm just boring old salt and pepper and maybe some cheeeese :)
Salsa is a good and healthy topping. You can also use plain unflavored yogurt instead of sour cream and then a little fat free cheese and voila :-D A peppy potato LOL
Once I made a Mexican Baked Potato. I topped it with: Black beans Lean ground turkey-seasoned w/ taco spices Sour cream sliced black olives salsa green onions
mmm that mexi-potato sounds yummy! Hmm. I must admit I usually spray mine with that fake butter flavored crap and eat. How about a potato skins inspired one, put reduced fat or non fat shredded cheese, bacos and ff sour cream? OR...broccoli and shredded low fat cheese. Tricia make some pulled chicken. I know Chuck is torquing in his grave (hey I may have started a rumor...is Chuck dead?!)buttttt.....I actually made BBQ chicken in the crockpot that was so soft I pulled it apart with forks and it was really good!
I love potatoes. Usually I do chili beans (make my own so they have less sodium) and broccoli. Sounds disgusting but really it is fabulous. That or this-
Here's what i'd do with a tater: Take the tater, add some refried beans, some fat free sour cream, salsa and put some cheese on top and then melt in the oven :)
baked beans, 2 spoons of encona sweet chilli mild sauce, dollop of half fat creme fraiche or if your like me... a laughing cow triangle!!! mmm mmmm. i know what i having for dinner now lol

Patates is Greek for potato: marinated artichoke hearts, feta cheese, and kalamata olive pieces. Yum!

they are a little spicy but have a good amount of fiber and protein in them.
Or spaghetti sauce and a bit of parm.
Have I mentioned I love potatoes?

Chili! Made from soy chorizzo. Or you can roast the potatoes. Mmmmm.

I actually like tomato sauce and melted cheese on mine. It sounds weird but I like red sauce and potato.
